Rice flour: 1/2 cup (60 g)
Water: 1/4 cup (60 ml), boiled
Salt: A pinch (optional)

Prepare the Dough:
In a mixing bowl, combine the rice flour and salt (if using).
Gradually pour the boiling water into the rice flour, mixing with a spoon to combine. Allow the mixture to cool slightly until it’s safe to handle.
Knead the Dough:
Knead the mixture into a soft, pliable dough. If it’s too dry, add a teaspoon of water at a time; if it’s too sticky, dust with a little more rice flour.
Shape the Rotis:
Divide the dough into two equal portions. Roll each portion into a ball and flatten it slightly.
Place one dough ball on a flat surface and roll it out gently using a rolling pin. Use a sheet of parchment paper or plastic wrap to prevent sticking, if needed.
Cook the Rotis:
Heat a non-stick skillet or tawa over medium heat.
Place one rolled-out roti on the skillet and cook for 1-2 minutes, or until small bubbles appear. Flip and cook the other side for another 1-2 minutes. Flip once more and cook until both sides have light brown spots. Repeat with the second roti.
Serve:
Serve hot with your favorite curry, dal, or chutney.
